Surimi Approved for School Lunch Programs
On December 4, the U.S. Department of Agriculture approved shelf-stable Wild Alaska Surimi products as a meat and snack credit in its school lunch programs.
Surimi is a premium-quality, all-natural seafood product, made from sustainably sourced Wild Alaska Pollock, flavored with crab, shrimp, scallops and/or lobster. Surimi is precooked and ready-to-use, offering zero waste, superior convenience and easy preparation.

We aim to provide creative kid-friendly products that use natural ingredients and fit the nutrient requirements for child nutrition and the National School Lunch Program. Currently, Wild Alaska Pollock Whole Grain Rich Breaded Fish Sticks are the only consumer-ready Pollock product (ID #110851) on the NSLP Foods Available list.
Wild Alaska's New Healthy Options for School Meals & Snacks
For a lighter than air option, Wild Alaska Pollock Skillet Cuts can be added to any dish to soak up the flavor. These bite sized diamond shapes are perfect for stir-fry, served on pasta or salad. They are packed with clean, lean protein providing 15g protein and 40 mg EPA and DHA omega-3 fatty acids per serving.
Wild Alaska Ancient Grain Breaded Fish Nuggets are light and crispy, with a heathy whole-grain coating. These versatile offerings can be served in a taco, salad or with a side of carrot and celery sticks, applesauce or fresh fruit for a kid-friendly meal.
Whether it’s our traditional authentic Japanese American-style California sushi roll with Wild Alaska Pollock Surimi seafood shreds, avocado and nori seaweed, or seasoned Wild Alaska Pollock Jerky Bites, kids will love these new finger foods. School Cooks will be pleased to know they are fully cooked and just need to be defrosted to serve. Our Wild Alaska Pollock Protein Noodles are a fully cooked, ready to eat option that is packed with protein. The noodles are perfect in a soup (like ramen) or prepared Pad Thai style. They can be eaten hot or cold.

NUTRITION FACTS & INFO: Wild Alaska Pollock
These omega-3 packed 0.36 oz diamond-shaped pieces make it easy to add sustainable Wild Alaskan Seafood to any dish, perfect for stir-fry, pasta as clean, lean protein. Made from once-frozen, untreated Wild Alaskan Pollock Fillet Block (deep-skinned for whiter fillets), they offer significant savings on labor costs and preparation time.
WILD ALASKA POLLOCK SKILLET CUTS
Made from wild caught Alaska Pollock and individually quick-frozen to lock in freshness, these white fish-burgers cook up quickly and easily, right from frozen. They come seasoned with a flavorful herb blend to complement the mild flavor of Wild Alaska Pollock while leaving your menu options wide open.

Light and crispy, coated with stealth heath whole grain coating. Serving option with a side of carrot and celery sticks, applesauce or fresh-cut fruit for a kid-friendly meal. Fully cooked, ready to eat, with no rinsing required! This high protein, gluten-free product is made to deliver nutrition in an easily adaptable form. Their neutral flavor profile melds with whatever they are added to. Made from Wild Alaska Pollock, these noodles are a healthful, sustainable alternative that delivers 10 g of high quality protein and just 7 g of carbohydrate per ¾ cup.
WILD ALASKA POLLOCK PROTEIN NOODLES
Restaurant quality traditional authentic Japanese American-style maki sushi roll with Wild Alaska Surimi Seafood shreds, avocado, nori seaweed, sweet-vinegar sushi rice, and studded with sesame seeds. RECIPES: Wild Alaska Pollock
HOME STYLE WILD ALASKA POLLOCK PROTEIN NOODLE PAD THAI
2 Lbs. Wild Alaska Pollock Protein Noodles (1 package)
2 Teaspoons Tamarind Concentrate
2 Tbs Dark Brown Sugar
2 Tbs Hot Water
1 Tbs Vegetable Oil
2 Large Eggs, beaten
2 Scallions, thinly sliced, white/green parts separated
2 Tbs Fish Sauce
½-1 Teaspoons Chili Garlic Sauce (for mild-med heat)
2 Cups Mung Bean Sprouts (or other sprouts)
½ Cup Carrots, shredded
2 Tbs Roasted Peanuts, chopped
Cilantro leaves, chopped
In a small bowl, whisk together the tamarind, brown sugar, fish sauce, and chili-garlic sauce. Whisk in 2 tablespoons hot water and set aside.
Heat oil in a non-stick skillet over high heat. Add eggs and scramble until set (about 1 minute). Add scallion whites, tamarind mixture and Wild Alaska Pollock Protein Noodles.
Cook, gently stirring until noodles are warmed through (about 3 minutes). Add scallion greens, 1 cup bean sprouts and carrots; cook 1 minute longer. Divide among plates or bowls and top with remaining bean sprouts, peanuts, and cilantro.
Serve with lime wedge and enjoy!
WILD ALASKA POLLOCK SKILLET CUT STIR FRY
1 Lb. Wild Alaska Pollock Skillet Cuts (1 package)
1 Lb. Broccoli/Broccolini, cut into bite-size florets
2 Tbs Vegetable Oil
2 Garlic Cloves, minced
1 Tbs Ginger Root, grated
1 Red Bell Pepper, cut into ½ inch strips
1 Tbs Black Bean Sauce
1 Tbs Soy Sauce
½ Tbs Chili Garlic Sauce
2 Green Onions, thinly sliced
2 Cups Rice (brown or white)
Bring pot of water to a boil and cook rice, according to package directions, about 20-45 minutes depending on variety. Set aside.
Bring another pot of water to a boil. Add broccoli or broccolini florets to boiling water and cook for 2-3 minutes until crisp tender or microwave 2 minutes on high power. Set aside.
Heat half the oil in a large non-stick skillet over high heat. Pat fish dry with paper towel and cook, about 2-3 minutes each side for thawed fish and 8-10 minutes for frozen, gently turning halfway through the cooking time. Remove to a bowl.
Add the remaining oil to the skillet and add the garlic and ginger, cooking for 30 seconds until fragrant.
Add the broccoli/broccolini, peppers and 1/2 cup water. Cover and steam for 3 minutes. Stir in the black bean sauce, soy and chili sauce and return fish to the skillet. Toss gently to combine.
Serve over rice, sprinkle with green onions and sesame seeds, and enjoy!
